High Volume Catering

Image of high volume catering kitchen While there is no formal definition of high volume catering as yet, we at BOSASA IFM refer to it as producing meals for a large number of people – between 5 000 to  100 000 at a time – whether in one setting or with dispersed coordination. Within the BOSASA catering business units, we have highly skilled chefs and management professionals who have been specifically trained to deliver catering solutions for these kinds of quantities.

As with all of our services, we strive for excellence in our staff and our delivery to clients. This is why these professionals have worked on all elements required for catering in high-density situations. This includes the manual labour of washing, chopping, cooking and presentation of the food right through to the BOSASA catering software developed by On-It1, the BOSASA Groups very own software development company.

Tools to assist with High Volume Catering

Our kitchens always strive to produce new and innovative dishes on a daily basis for our high volume catering clients. This is why we’ve developed several tools to streamline the process, including:
  • Quick Turnaround Times The BOSASA IFM chefs are highly experienced and able to meet the requirements of a range of feeding situations. They can produce either an exceptional à la carte menu or pap and gravy for a soup kitchen depending on what the circumstances call for. They know how to work within a client's budget, and our partnership with the Department of Correctional Services has taught our experts how to produce 190 000 meals per day. Since the awarding of the catering contract for the Department of Correctional Services in 2004, BOSASA has served in excess of 620 million plates of food.

  • Consistent Bulk Supply This refers to the quality and strength of the relationships held by BOSASA IFM and its comprehensive supply network. Being able to source, store, distribute and access high volumes of foodstuff commodities, ingredients, and support products such as cleaning agents and packaging materials are all vital requirements to managing and maintaining high volume catering requirements.

  • Kitchen Systems Design A simple, modular layout for a preparation area and cooking space makes the entire process of food production faster and more efficient. It also allows each stage of cooking and plating to flow into the next. This means that much can be accomplished in a short space of time, and with limited space. In addition to this, BOSASA’s highly trained and experienced catering business unit is able to change and modify current kitchen facilities that are producing sub-standard results into streamlined environments that maximise output potentials specific to client requirements.

  • Mobile KitchensThe introduction of our unique mobile kitchen units has allowed BOSASA IFM to deliver bulk catering requirements anywhere, anytime. These ‘containerised kitchens can be used in rural areas for community rallies, and have proved extremely useful when clients have needed to upgrade or change their current kitchen design without cooking downtime. Each of these kitchens can serve up to 10 000 meals at each sitting, as well as keep food fresh for a decent length of time.

  • Kitchen Administration System The BOSASA catering software that we’ve developed can keep track of a range of items, including what ingredients have been ordered, where they have been delivered to and how much is being used per day. It’s an innovative tracking tool for centralised bulk food usage and distribution, which is used to save time and money.
